1. Make the dough

Put an appropriate amount of baking powder into the ordinary flour to make the dough. Mix it with water and knead it until it does not stick to your hands. Place the dough in a basin. 2. Apply alkali and knead the dough

When the dough swells and becomes honeycomb-shaped and has a slight sour smell when it is torn apart, you can take out the dough and place it on the panel and add an appropriate amount Knead while adding edible alkali. When you can no longer smell the sour smell, tear a piece of dough as big as your index finger and bake it by the stove. Break it apart. If there is no yellow color and no sour smell, apply the alkali and it will be shaped. If it turns yellow, it means there is too much alkali. You can leave it for a while, steam it again, and then steam it again. If it smells sour, it means there is insufficient alkali, and you need to add a little alkali before shaping.

3. Shaping

Knead the prepared dough into a round bar according to the size of the steamer, and then cut it into squares with a knife to make square steamed buns. If you use your hands to cover the board, rotate and knead the dough gently, you can make a round shape and wrap it with filling.

There are two methods of making dough

1. Use dough fertilizer to make dough (usually called alkaline dough)

Soak the dough fertilizer in water first and then put it into the dough. Pour in the noodles and mix well. Wait for 8 hours until the noodles rise to double their original size. Then, the noodles will have no sour taste and have a slightly alkaline smell. Wait for another half an hour. You can put some vinegar in the pot when steaming to prevent the steamed bun skin from becoming flowery. point, be sure to put the buns in cold water and then turn on the electricity.

2. Use Xiaomu to make dough (usually a quick method)

Ingredients: 500 grams of flour, dry yeast 3 grams, 5 grams of baking powder, 1 tael of soybean oil, warm water (250 grams - 300 grams) according to the amount of flour, 20 grams of sugar.

Method: 1. Pour the flour on the chopping board, add dry yeast, baking powder, sugar, mix evenly, and make a pit.

2. Add warm water to the pit, add soybean oil, mix and knead until the dough is slightly awake, about 1 hour.

3. After the noodles wake up, make the steamed buns, braised buns, and flower rolls that you want to make.

4. Put the prepared green dough into the drawer, put cold water into the pot, plug in and steam for 13 minutes. (If you steam the steamed buns, it will take about 30 to 40 minutes; if you steam the flower rolls, it will take about 17 minutes)
