Pork belly is located in the abdomen of the pig, mainly near the location of the belly, relatively lean, tender meat. Pork Panko, on the other hand, contains both the fat and lean parts of the pig's belly, with a thicker layer of fat and a thinner layer of lean meat, making it more fatty and juicy. Pork belly pays more attention to the texture and flavor of the meat, and is suitable for stewing or stir-frying; whereas pancetta, because of its rich fat content, is suitable for barbecue, braising, and other cooking methods that need to keep the meat tender.
