Materials:

You can make 8 (63g) mooncake molds.

Cake crust: glutinous rice flour 45g, sticky rice flour 35g, cooked flour (wheat starch) 20g (ready-made ice crust flour consisting of three kinds of flour can also be bought), milk 185g, sugar powder 50g and salad oil 20ML.

2 teaspoons of custard powder (10ml for making yellow icing), 2 teaspoons of green tea powder (10ml for making green icing), 2 teaspoons of cocoa powder (10ml for making chocolate icing) and 2 teaspoons of coconut powder (10ml for adding flavor to white icing.

Filling: 240 grams of lotus seed paste, please see here for the method of lotus seed paste filling. You can also use bean paste stuffing, chestnut stuffing and so on.

Exercise:

1. Put the milk, powdered sugar and salad oil into a basin and mix well.

2. Mix glutinous rice flour, sticky rice flour and cooked noodles (you can also buy ready-made ice skin powder, which is a mixture of three kinds of flour), pour it into milk solution and stir well.

3. Let the stirred batter stand for 30 minutes, and then steam it in a steamer for about 15-20 minutes. Stir the steamed batter evenly and let it cool.

4. Divide the steamed dough into four parts and mix with coconut powder, custard powder, green tea powder and cocoa powder to make four-color dough.

5. Divide the dough into 8 parts.

6. Divide the lotus paste into 30g.

7. Sprinkle a proper amount of cake flour on your hands and chopping board (put a proper amount of glutinous rice flour into a clean pot, fry until it is slightly yellow and smells like raw flour, and let it cool for use. Stir-fried glutinous rice flour is cake powder), to prevent hands from getting wet, flatten the cooled ice skin and add about 30 grams of bean paste stuffing.

8. Push the dough up slowly by hand until the filling is completely wrapped.

9. Put the wrapped jiaozi into the moon cake mold for compaction.
