How to steam eel with pickled vegetables
After slaughtering the eel, scald it slightly with boiling water to remove some of the mucus on the surface of the fish. Then use scissors to cut into sections (as shown in the picture), do not cut completely. Then marinate with cooking wine, salt and ginger for 30 minutes.
Soak an appropriate amount of prunes with water to prevent them from being too salty or too dry.
Sprinkle the prunes on the fish, pour an appropriate amount of soaking water on the fish, and then add sliced ??bacon.
After the water in the pot boils, steam it for 20-25 minutes and it is ready. The meat is tender and delicious, with few fish bones, no worse than Kabayaki eel.
Tips
The river eel must be fresh, but the mucus on the surface is slippery, so you can ask the sales staff to handle it on your behalf.
