Step 1: clean the red turtle, then cut flowers on the surface of the red turtle with a kitchen knife, then pour cooking wine on it and spread it evenly, then sprinkle some salt and spread it evenly for later use!
Step 2: Chop the millet pepper, chop the ginger flat, chop the garlic flat, chop the shallots into chopped green onion, and put them all in a bowl for later use!
Step 3: Heat the pan, add oil to heat it, then fry the fish in the pan until both sides are brown, and take it out for use! Note: when frying fish, the oil in the hot pot will not stick to the pot and the skin of the fish will not fall off, so the fried fish will look better. Also, the oil temperature must be high before the fish goes into the pot!
Step 4: Leave the bottom oil in the pot, then put the ingredients (Jiang Mo, minced garlic, chopped green onion and millet pepper) into the pot, stir-fry with low fire, add 1 tbsp bean paste after stir-frying, stir-fry with low fire until red oil, add 2 bowls of clear water, add 1 tbsp salt and add 1 tbsp soy sauce. After boiling, put the fried red turtle into the pot, cover the pot and simmer for 12 minutes!
Step 5: When there is not much soup left, pour in a little water starch, and then collect the juice over high fire. When the soup is thick, take the red turtle out and put it on a plate, then pour the soup on the red turtle!
