The House of Swallows believes that to stew bird's nest, you need at least one stewing pot and a pot that can be put into the whole stewing pot, of course, you can also use ceramic pots or stainless steel pots.
Drain the soaked and cleaned bird's nests and place them in the stewing pot with a proper amount of hot water to cover them, then put the whole stewing pot into the pot, fill it with hot water to half the height of the stewing pot, and then simmer it over a slow fire.
The water level of the bird's nest plus other condiments and boiled water (or other nutrient solution) in the stewing pot should not be more than 7/10 of the stewing pot. This is because the bird's nest will expand during the stewing process, causing the water level to rise. If the water level is too high before stewing, the bird's nest will be easily rolled out and wasted.
Stewing bird's nests in a slow simmering method will naturally keep the temperature inside the cup at around 80 degrees, which will reduce the damage to the bird's nest proteins and better preserve the nutrients and flavor of the bird's nests.
