Method A:
Ingredients: 2500g millet noodles, 250g soybean noodles, 50g salt, 5g alkali, appropriate amounts of soy tofu stew, chili paste, sweet noodle sauce, chopped green onion, A little bit of vegetable oil.
Method:
(1) Mix millet noodles, soybean noodles, alkali and salt together, add 3000 grams of water to make a paste.
(2) Heat the pancake pan, rub some oil on the tip, put a spoonful of batter in the center of the pan. Use a T-shaped bamboo basket to turn the batter flat to form a thin round cake. After it's cooked, use a spatula to scoop up the pancake along the edge and take it out of the pan. Spread the sauce, soybean curd and chili paste on it, sprinkle with chopped green onion, put on the pancake, and roll it up.
Method B:
Mix the noodles into a paste. Add some salt, five-spice powder and chicken essence. A pan is best. When the pan is hot, pour a ladle of batter into it. Lift the pan and spread the batter evenly on the bottom of the pan (turn it into a round thin pancake). If you want to add eggs, add an egg on the pancake. Fry it for a while, add a few drops of oil to it, turn it over and bake it again.
