175 grams of high-gluten flour
100 grams of water
2 grams of salt
2 grams of dry yeast
5 grams of milk powder (optional)
Main dough
80 grams of high-gluten flour
1g salt
40g fine sugar
15g milk powder (optional)
40~45g homemade sugar-free yogurt
15 grams of light cream (if not available, use yogurt instead)
1 gram of dry yeast
15 grams of unsalted butter

Knead the medium-sized seeds into a ball and refrigerate them in the refrigerator at about 5 degrees Celsius for more than 17 hours and no more than 72 hours. I knead the dough for Panasonic bread dumpling wrappers for 15 minutes.
Cut medium into small pieces, mix the main dough and knead until expanded, add butter and knead until completely. Relax for 30 minutes.
The rested dough does not need to be doubled in size. Many friends will make mistakes in this step. It only needs to be rested for half an hour.
Apply a little oil on your hands, deflate the dough and divide it into 3 parts, roll into a ball and let rest for 15 minutes.
Roll the relaxed dough into an oval shape, and roll it once, 1.5 times. Continue to relax for 15 minutes.
After relaxing, roll out twice, 2.5 circles, no more than 3 circles.
Put it into a toast mold and place it in a warm and moist place for final fermentation. The final fermentation temperature must not exceed 40 degrees.
Let ferment until 8 or 9 minutes full, then bake in the lower rack of a preheated 180 degree oven for 35 minutes. Firepower and time depend on your own oven.
Shock once out of the oven, unmold immediately and let cool until cool to hand temperature, then seal and store. This toast takes 5 minutes longer to bake than regular toast. The first one I baked for 30 minutes shrunk so much that I had to tear it apart and eat it. The other one quickly made up for it and baked it for a few more minutes, but it stopped shrinking.
The interior is awesome.
The waisted one was later roasted and torn into pieces and eaten. It was very soft.
