Legend has it that it was invented by Zhang Zhongjing in the Eastern Han Dynasty.
Zhang Zhongjing had quite a disdain for officialdom and was reluctant to become an official. There is a story that Zhang Zhongjing was once the governor of Changsha, but on the first and fifteenth days of the lunar calendar, he would no longer work in the office, but rather, he would set up a case in the lobby to diagnose people's illnesses, i.e., "sitting in the hall". Therefore, later generations honored Zhang Zhongjing as Zhang Changsha, and his prescription as Changsha prescription.
Legend has it that he invented the dumpling when he left his post as governor of Changsha and returned to his hometown. On the way back home, it was the cold winter time, with the north wind piercing the bones and snow flying. Zhang Zhongjing was indescribably sad when he saw many homeless people with no clothes, starving and skinny faces, not to mention their ears were frozen and rotten.
He always wondered if he could come up with a way to help those poor people. Zhang Zhongjing studied a good method: drinking a bowl of "dispel cold and delicate ear soup".
