Egg yolk baby cabbage

Ingredients needed: 2 baby cabbage, 3 salted egg yolks, 1 green onion, 1 piece of ginger

Seasoning required: 0.5g salt , 1 gram of MSG, 5 grams of sugar

Production process:

1. Clean the baby cabbage, cut the roots without breaking them, and cut them into strips along the length.

2. Wash the green onions and cut into segments, peel the ginger and cut into shreds. Soak the baby cabbage in water for about 10 minutes, remove and drain. Put the salted egg yolk into the steamer and steam for about 10 minutes.

3. Cut the salted egg yolk into fine pieces, the more chopped the better.

4. Heat the wok, add an appropriate amount of salad oil, cook until it is about 60% hot, and add the baby cabbage to control the moisture.

5. Fry for about 10 to 15 seconds, remove the baby cabbage to control the oil. Do not fry for too long, otherwise the baby cabbage will become severely dehydrated or even burnt.

6. Leave a little base oil in the wok, add shallots and ginger and sauté until fragrant. Add salted egg yolk and stir-fry over low heat until fragrant. Foam will usually appear. Just continue to stir-fry. Be sure not to stir-fry salted egg yolks over high heat, otherwise they will easily burn and can be done away from the heat.

7. Add the fried baby cabbage and stir-fry evenly over high heat.

8. Add a little salt, MSG, and sugar to taste. Add less salt because the egg yolk has a certain saltiness, so a little salt is enough.

9. Stir-fry over high heat and serve.
