1000g winter melon
250g brown sugar
50g rock sugar
3 slices of ginger 01
First, wash the winter melon and cut it into pieces. Note that the skin, seeds and flesh of the winter melon need to be preserved. 02
Put the cut winter melon in a bowl, add brown sugar, mix together and stir well, set aside and marinate for 2 hours until the juice is released. 03
Pour the pickled winter melon and brown sugar into the pot, then add 50 grams of rock sugar, cover the pot and bring to a boil over high heat. 04
After boiling, open the lid of the pot, add appropriate amount of ginger, and continue to cook for 2 hours. It needs to be stirred occasionally during cooking. 05
After cooking, use a strainer to filter out the winter melon pulp and squeeze out the winter melon juice. 06
Let the squeezed winter melon juice cool down, then put it into a bottle, seal it, and store it in the refrigerator. 07
Take it out when you want to drink it, mix it with water and drink it. 08
You can also add some lemon juice or sugared osmanthus to make it taste better.
