2. Practice:
(1) Remove the mouth of the squid head, tear off the epidermis by hand, and then cut into sections; Cut green pepper, red pepper and onion into strips similar to the size of squid whiskers; Slice half of fresh ginger and dice half; Dice garlic, cut scallion into small pieces, and finish the primary processing. This step is mainly to peel the squid whiskers, which requires a little patience.
(2) Pickled squid whiskers. Put the chopped squid into a bowl, add fresh ginger slices and onion segments, add appropriate amount of cooking wine and salt, stir well, and marinate for 15 minutes to remove the fishy smell.

This step is mainly to grasp the blanching time. Generally speaking, put boiling water into the pot, boil it again and take it out.
(4) Stir-fry the peppers. Add a proper amount of cooking oil to the pot, add pepper with low heat and cold oil, and slowly stir-fry for fragrance. This step is completed. Pay attention to low heat and avoid frying peppers.

This step mainly uses high oil temperature, and the frying time should be well grasped, not too long, otherwise the squid will become "old" and can't bite.
(7) Stir-fry the green pepper, red pepper and onion until they are broken. Stir-fry squid for a while, then continue to use high heat, add green pepper strips, red pepper strips and onion strips and stir-fry until the flame is turned off. Pay attention to the frying time in this step, it should be shorter.
