Ingredients: 500 grams of ribs. Scallop10g, red pepper10g.
Vegetable oil 100g, fermented soybean 50g, refined salt 5g, monosodium glutamate 4g, oyster sauce 10g, tender meat powder 4g, onion 5g, dried tangerine peel 2g, and dried starch 15g.
Features: sanctions are soft and rotten, and the taste is fresh and fragrant.
Operation: 1. Chop lobster sauce, dried tangerine peel and scallop, stir-fry until dry, soak in 70% hot oil, and add refined salt, monosodium glutamate, oyster sauce and dried starch to make lobster sauce.
2. Chop the ribs into 4cm long segments, marinate them with tender meat powder for 30min, then rinse them with tap water until they are bloodless, take them out, and absorb the water with a clean cloth.
3. Cut the red pepper into rice and shred the onion.
4. Mix the soy sauce with the ribs, put them in a plate, sprinkle with sharp red pepper rice, steam in a cage for 20 minutes, sprinkle with chopped green onion and drizzle with sesame oil after coming out of the cage.
Fresh curry steak
Ingredients: 4 pieces of steak.
Onion 1, potato 1, carrot 1 rootlet.
1, 1 tbsp cooking wine, 1 tbsp soy sauce, 1/4 tsp baking soda, 5 tbsp water;
2. Half a tablespoon of cooking wine, 3 tablespoons of curry powder, half a teaspoon of salt, sugar 1 teaspoon, water 1 cup.
Exercise: 1 Clean the steak, cut it into small pieces from the middle of the bone, add seasoning (1) and mix well, marinate for 20 minutes, then fry both sides in a pan with a little oil and take it out;
2. Dice the onion, peel and cut the potatoes and carrots respectively. Stir-fry onion diced with 2 tbsp oil, then add curry powder to stir fry, then add carrots and potatoes and other materials of seasoning (2) to boil;
3. Cook on low heat 10 minute, then add the steak and stir-fry until the soup is dry and thick. Turn off the heat and serve.
Fancy braised pork
Ingredients: Pork belly 1.5 kg, washed and cut into pieces about 2 cm square, chopped onion in half, mashed ginger in half, more than 20 pieces of pepper, 4 pieces of star anise and Anemarrhena asphodeloides, half two pieces of rock sugar, 3 tablespoons of light and dark soy sauce, appropriate amount of salt, and about 2 kg of fresh soup.
Exercise: 1, put the meat in the pot, add fresh soup (water is also acceptable), boil it on high fire, and skim off the foam.
2. Add onion, ginger, pepper, salt, star anise, sweet potato, rock sugar and soy sauce.
3, switch to a small fire, keep boiling and not boiling, burn until the soup is thick and soft, remove the ginger and onion, and take the pot and bowl.
Basansu
Ingredients: 300g corn shoots (canned).
Rape 100g carrot 50g mushroom (fresh) 50g.
Salt 3g monosodium glutamate 2g salad oil 15g starch (pea) 5g.
Operation: 1. Cut the old Ye Xiu at the front end of rape into sections with the length of 10 cm, blanch it in boiling water for10s, and immediately take it out and cool it in cold water.
2. First cut the carrot into flower knives, and then cut it into 6 pieces.
3. Soak mushrooms in warm water for 30 minutes until they are soft and pedicled.
4. Arrange the corn shoots, rape, mushrooms and carrot slices on the plate according to the requirements of pictures and texts, add salt and monosodium glutamate, and steam in a steamer for 20 minutes.
5. Before serving, mix salad oil, salt, flour oil, broth and starch water (5g starch with water) to make a shower juice, and then pour it on the vegetable noodles.
