How to make Doubanjiang
Doubanjiang is available in the market. However, so that everyone can enjoy the bean paste made by themselves, we still provide you with the recipe of bean paste.
Ingredients: 10 kg of fresh red pepper, 2 kg of watercress, salt, garlic, star anise, geranium and cinnamon.
Exercise:
1. Wash the red pepper, dry the surface moisture, and crush it with a food processor to make it the size of a fingernail.
2. Add 4 kilograms of garlic and 3 kilograms of salt to the crushed red pepper, and add appropriate amounts of star anise, bay leaves, cinnamon, etc. Go and taste it. After mixing evenly, put it in the sun for a few days to dry it thoroughly and remove excess moisture.
3. Mix the moldy watercress with an appropriate amount of salt and cold water, and let it sit for two days to soak.
4. After drying the peppers, mix them with the soaked watercress and put them in a container. Add the lettuce oil and stir well, then cover the peppers with the canola oil.
5. Let the sauce dry in the hot sun for a few days until you can smell the spicy aroma. Store the dried bean paste in a clean jar, seal the mouth of the jar with water, and take it out every time.
Making bean paste is very simple, but the most important thing is to let it soak so that it can have its original effect. Doubanjiang can be used to make bean paste fish, doubanjiang tofu, etc.
