Ingredients to prepare: 3 tomatoes, 500 grams of ribs, 1 small handful of bean sprouts, 2 coriander stalks, 20 grams of green onions, 8 garlic cloves, 5 slices of ginger, 6 grams of pickled pepper, pickled ginger 1 small piece, 400ml of cold boiled water, 15g of cooking wine, 5g of ginger seed oil, 7g of salt
Preparation steps:
1. Combine tomatoes, pickled peppers, pickled ginger and garlic cloves , cold boiled water, and salt, put them into a food processor together. If you have pepper water, you can also add 2 tablespoons, and start the food processor to make a paste.
2. Filter through a mesh sieve again and set aside for later use.
3. Prepare another pot of water. Put the ribs, ginger slices, green onions and 1 tablespoon of cooking wine in the cold water and blanch them.
4. Heat oil in a wok, sauté onion, ginger and garlic until fragrant, then add tomatoes and stir-fry to release the water.
5. Add the beaten red sour soup to boil and add the ribs. If the soup is too little, you can add some more warm water, and the amount of water should cover the ribs. Turn on medium heat and simmer for 30 minutes. If you like a softer texture, you can simmer for longer.
6. After stewing, add bean sprouts. You can also add other favorite side dishes, such as baby greens and old tofu. Pour in the ginger oil before serving.
