How to make pancakes with sweet potatoes?
1. Steam the sweet potatoes, peel them while they are hot, put them in a container, and press them into a puree, remember to do it while they are hot!
2. Add flour to the hot sweet potato puree, stirring as you add, until you can form a ball. Be careful not to add too much at once! The less flour you add, the softer your pancakes will be. Knead the dough well and cover with plastic wrap or a damp cloth and let it rise for ten minutes.
3. Roll out the dough into long strips, and cut into small pieces of about 60 grams each. Cover with plastic wrap and set aside.
4. Roll out the small dosage into a round cake, heat a pan, brush with a little oil, put in the cake embryo, turn it over diligently so that the cake is evenly heated, cook over low heat until both sides are lightly browned.
When it's hot, you can eat the sweet and soft sweet potato itself.
