Vietnamese Crispy Lemongrass Chicken Steak
1. Pat the lemongrass loosely and then chop it, sauté it until golden brown, set aside.
2. Remove bones from chicken thighs and pat loose with the back of a knife.
3. Add all ingredients and seasonings, mix well and marinate for at least 2 hours, (preferably overnight before using) skimming off the seasonings when removing.
4. Heat a moderate amount of cooking oil in a pan and fry the chicken steak over medium heat until the skin is crispy and golden brown.
