1. Yuqian scrambled eggs
Ingredients: 100 grams of Yuqian, 4 eggs, appropriate amounts of refined salt, monosodium glutamate, vegetable oil, chopped green onion, and shredded ginger.
Method: Pick off the tender elm leaves, wash them and drain them. Crack the eggs into a bowl, add refined salt and MSG, and beat with chopsticks into a paste. Put oil in the wok, heat it and add chopped green onion and shredded ginger until fragrant. Remove the chopped green onion and shredded ginger. Pour in eggs and stir-fry for a few times. Add Yuqian, stir-fry evenly, season with refined salt and serve.
2. Yuqian porridge
Ingredients: 80g glutinous rice, 50g Yushuqian, appropriate amount of oil, appropriate amount of salt, appropriate amount of chopped green onion.
Method: Wash the glutinous rice and soak it in water for 10 minutes. Boil the water in the pot and add the glutinous rice. Bring to a boil over high heat and simmer until. If the rice is slightly rotten, add some salad oil and stir evenly to continue cooking. Add Yushu Qian to the thick rice porridge and stir evenly. Cook for 2 minutes and add salt to taste. Add the chopped green onions and stir evenly. Drizzle in sesame oil. Stir evenly and turn off the heat.
3. Yuqian Wowotou
120 grams of fresh Yuqian and 200 grams of cornmeal. Accessories: 50 grams of soybean noodles, 50 grams of plain flour, 2 grams of baking soda, and water.
Method: Remove the stems from fresh elm leaves. Rinse well with water. Mix cornmeal, soybean flour, flour, and baking soda. Then put the cleaned elm money into the basin and mix well. Add water slowly into it and knead it into a dough of moderate hardness. It should not be too soft, otherwise it will not shape when kneaded. It is best to leave it for 20 to 30 minutes. Before pinching the steamed buns, dip your left hand in some cold water and rub it on the palm of your right hand to prevent it from sticking to your hands when pinching. Form into 40g balls by hand. Pour cold water into the pot, place soaked corn husks or wet cage cloth on the grate, place the prepared steamed buns on top, and steam over medium heat for 20 minutes.
