Sometimes you will see a small line on the package after the cooking time: al dente. al dente means a chewy or raw texture, which is how it is cooked in restaurants in Italy and other countries, but if you don't like the raw texture, you can cook it for 1-2 minutes more.
Personally, I recommend that you reduce the cooking time by 1 minute from the time on the package, because you don't eat it right after cooking it, but you have to go to the next step in the process, like mixing the spaghetti sauce, etc., and the process actually reheats it again, so the time can be just right.
If you're cooking fresh pasta, then go down after the water boils and cook for 1-2 minutes to get it fully cooked.
Do I pass the pasta under cold water after cooking?
There is no need to pass the pasta under cold water after cooking! This is important.
Actually, if you think about it, you'll know if you need to run it under cold water. What is the purpose of cold water for food in general? One is to clean it, and the other is to cool it down with cold water so that the food stops being heated and prevents it.
These two points spaghetti can not be used, so it is not necessary to pass the cold water.

The next step is to teach you an authentic Carbonara pasta (Carbonara) recipe, very simple, the only ingredients needed are eggs, smoked meat or bacon, spaghetti, salt, black pepper and Parmesan cheese. The recipe is as follows:
1. First, crack 2 eggs into a bowl, whisk with chopsticks or a fork and set aside, remembering to use aseptic eggs.
2. Put enough water in a pot, bring it to a boil, then add salt and 100g of pasta.
3. While the pasta is cooking, in a separate pan, fry the smoked meat or chopped bacon. Authentic Carbonara uses Italian pork cheeks, so we can use bacon instead.
4. If the bacon has too much oil, you can pour out part of it, and then put the cooked pasta into the bacon pot, turn off the heat, the pot will gradually cool down to a certain level, pour in the egg mixture, stir well.
This step is very critical, wait for the pan to cool down before pouring in the egg mixture, if the pan is too hot, the egg mixture will turn into scrambled eggs, if the pan is too cold, the eggs will not be cooked, so this is the only difficult part of the whole dish.
The carbonara is made without cream; it is a creamy texture formed by the eggs.
