Step 1
Prepare 500 grams of pork, remove the skin, and cut the large pieces into small pieces.

Cook the meat in a cold water pot, add 1 piece of ginger, 2 spoons of cooking wine, and cook until foam forms. Turn off the heat, take out the pork, wash off the foam, and pour away the water in the pot.
Step 3
Add water to the pot, add pork cubes, 2 slices of ginger, 4 cloves of garlic, and 1 section of white scallion, which is about 10 cm long. Add the braised pork packet and rock sugar, pour in dark soy sauce and light soy sauce, and add 2 tablespoons of salt. If you want the stewed meat to be darker in color, you can add more dark soy sauce for coloring. After the fire boils, turn to medium heat.
Step 4
I am afraid that the fire will be too high, so I put a chopstick on each side of the pot to lift the lid, so that I am not afraid that the foam will push the lid open and the pot will flow out. It's everywhere. The picture above is what it looks like after about an hour of marinating.
