Minister spice is the second largest spice in a group of formulas. The main feature of the minister material is that it can make up for the lack of aroma and taste of the monarch material according to the overall design of the flavor of the stewed dishes, so as to make the flavor of the stewed dishes more perfect.

In a reasonable perfume formula, there are generally 5- 10 kinds of long ingredients, and their total weight accounts for 29% of the whole perfume formula.

Common courtiers include Amomum villosum, Radix Angelicae Dahuricae, Fructus Tsaoko, Amomum villosum, Radix Glycyrrhizae, Pericarpium Citri Tangerinae, Rhizoma Kaempferiae, Pepper, Fragrant Leaves, Rapeseed, Ramulus Cinnamomi, Ginger, Cumin and Siraitia grosvenorii.

The main feature of seasoning is that it can make the flavors of various spices blend with each other, correct the bad smell in brine, and endow braised pork with fragrant characteristics. In a reasonable spice formula, there are generally 3- 10 condiments, and their total weight accounts for 13% of the whole spice formula.

Common condiments include clove, long pepper, groundsel, citronella, Cao Ling, vanilla, cardamom, thyme, rosemary, peach, Gan Song and bitter orange.
