The most common collocation method of kelp is to make cold dishes. Today, I will share the practice of mixing kelp with garlic for seasoning. Spicy garlic juice with refreshing kelp makes people have an appetite. It's an appetizer, as good as the one in the restaurant, and it's good to drink and eat. Here's how to share:
Materials required for shredded kelp with garlic paste: dried kelp 1 root, 2 parsley, 2 shallots, 4-5 cloves of garlic, appropriate amount of salt, sesame oil 1 tablespoon, Chili oil 1 tablespoon, 3 tablespoons of rice vinegar and half a tablespoon of sugar.
Practice steps:
1. Soak dried kelp in rice washing water for 4-5 hours, and soak kelp until soft.
2. Put the garlic into the garlic jar, add salt, and hammer it repeatedly with a garlic hammer until the garlic is mashed into garlic. Add salt when mashing garlic to increase friction, and it is not easy to slip when mashing garlic. When mashing garlic, garlic water will splash out, and it will be thicker after adding salt, and the juice will not fly around.
3. Cut the shallots into sections and the parsley into small pieces with an oblique knife.
4. Add water to the pot to boil, add the soaked kelp and cook for about 10 minute, and cook the kelp until it becomes soft. Try kelp silk. It's not hard, but crisp. Take it out, put it in cold water, take it out and drain it, and cut it into long sections of about 10 cm.
5. Put kelp shreds into a large bowl, add garlic paste, onion, coriander, rice vinegar, Chili oil, sesame oil and sugar. Salt has been added to garlic paste, and it is not necessary to add salt when stirring.
6. Stir evenly with chopsticks from bottom to top, then take it out and put it in the plate. A plate of cold kelp with good color and flavor is ready.
Tip: Don't drink tea immediately after eating kelp (tea contains tannic acid), and don't eat sour fruit immediately (sour fruit contains vegetable acid). Because kelp is rich in iron, the above two foods will hinder the absorption of iron in the body.
Kelp cannot be soaked for a long time. You can usually soak for about 6 hours. If the soaking time is too long, the nutrients in kelp will dissolve in water, and the nutritional value will decrease.
