Purple Potato Steamed Buns
This is the same purple potato buns that I made years ago. It was also my first attempt at making buns using the one fermentation method, and it was the firmer, chewier texture that I like. I like the firm, chewy texture. It takes a little more patience to sift the mashed purple potatoes. After sifting, the mashed purple potatoes will be very fine, and then mix with the flour and roll well, so that the dough will be even and nice. I've also tried not sifting the purple potatoes, steamed and cut into small pieces and kneaded into the dough, but there are particles, the finished product is not uniform and smooth (but it does not affect the eating is, haha)
1. Preparation materials: 1 purple potatoes (about 130 grams), 200 grams of flour, 2 grams of yeast, 75 grams of water (the amount of water depending on the flour absorbent adjusted)

7. After 30 minutes, turn on the fire, and steam the buns
