I. Materials used
condiments
Soybean100g
condiments
Lactone 2 g
Second, seasoning
Water 1000 ml
Shrimp skin 1
A few drops of sesame oil
Zhacai 10g
5 grams of seaweed
Proper amount of soy sauce
2 shallots
Third, methods and steps:
Step 1
Weigh100g of dried soybean to prepare gluconic acid delta-lactone.
Second step
Soak soybeans in clear water for one night and they will swell completely. After soaking, the water was filtered off (after weighing, 100 g of dried soybeans was soaked in 236 g).
Third step
Add 1000ml of clean water to the soymilk machine.
Fourth step
Pour in the soaked soybeans and turn on the soybean milk function.
Step five
Filter the prepared soybean milk twice with a sieve (gauze or cloth bag will have better filtering effect)
Step 6
I measured the temperature of the filtered soybean milk, and it was only 72 degrees. The suitable temperature for making soybean milk to release lactone is about 85 degrees.
Step 7
Pour the soybean milk into the pot and heat it again. Cook on medium heat until you see the edge of the pot start to move, and then it will bubble. The temperature is enough, turn off the fire.
Step 8
Weigh 2g of δ -lactone gluconate in advance and melt it with a spoonful of cold water.
Step 9
Pour the molten glucono delta-lactone liquid into a pot, and stir while pouring.
Step 10
Cover and let stand for about 15 minutes (in order to keep the temperature, I put the whole soybean milk pot into a big pot filled with hot water, but this step should be ok without doing it)
Step 1 1
Prepare dried shrimps, shredded mustard tuber, chopped green onion, shredded laver, and light soy sauce (if you like sweetness, ignore this step and change it to your favorite sweetness).
Step 12
After the soybean milk in the pot is solidified, put it in a bowl with a large spoon, put shrimp skin, seaweed, mustard tuber and chopped green onion on the surface, pour in some soy sauce (or drop a few drops of sesame oil) and mix well to start.
