Powdered sugar is finer than powdered sugar, and is made by crushing sugar or rock sugar in a pulverizer with a 3%-10% starch mixture. In contrast, the production of white sugar will be sprayed into the conversion syrup of about 2.5%, more water, soft, delicate texture.
Powdered sugar, due to its fine grain size, can easily absorb water and clump together; therefore, it is usually solved in two ways, one is to add a certain percentage of starch in powdered sugar, so that the powdered sugar is not easy to coagulate, but this will destroy the flavor of the powdered sugar; the other way is to pack the powdered sugar in a small-size aluminum bag and then put it in a large package for sealed preservation. Using one small bag at a time, powdered sugar usually clumps only after direct contact with air.
