There are two layers of ingredients in the pudding, one of which is custard, which is a mixture of eggs, heavy cream, milk and sugar that solidifies when heated in a water bath; it's smooth, soft and creamy. Then comes the caramel sauce, which is made from sugar and water; the sugar is melted until it is a deep amber color and then water is added. When the caramel cools, it resembles a hard candy, but when it's added to the glass jars and baked with the custard, the caramel turns into a sweet syrup with a slightly bitter flavor, which is perfect with the custard.
For the caramel, combine the sugar and 1 teaspoon of water in a small saucepan. Cook over medium heat and stir with a heat-resistant rubber spatula or wooden spoon. The sugar will soon clump, but will eventually melt into a dark amber sauce. Add 1 teaspoon of water to the sauce and the caramel will quickly bubble. I like this pudding because it's not too sweet and it's light and just the right amount of pudding. They come in individual jars and you can make them up to 3 days in advance. Even though I'm not a big fan of caramel, the flavor of this pudding is completely different from the caramel we usually eat.
