Soak catfish in water of about 40 degrees for 20 minutes, remove a film on the surface (reduce the fishy smell), and use cooking wine, salt and dried Chili noodles.
Soak in water for 30 minutes. Ginger, garlic, pepper, pepper and spicy powder for use. There is a packet of fish seasoning (fragrant fish or spicy fish) in the shop.
When the oil is (warmer), stir-fry the seasoning together with the spare seasoning, and then add the stock, even if there is no clear water. When the water boils, add fish and favorite dishes. Cook the cooked dishes before serving.
