2. Cut the fish into pieces, cut three dried peppers into powder, add pepper, star anise, salt and pepper to the fish pieces and marinate for one night (as much salt as possible).
3. Wash the fish pieces marinated overnight with clear water for later use.
4. Add ginger and 2 dried peppers to the washed fish pieces, and then pour in the right amount of white sesame seeds.
5. Mix the eggs, flour, water and proper amount of salt and stir them into a uniform batter. Then pour the stirred batter into the fish pieces, and stir the batter and the fish pieces evenly again for later use.
6. Bring the oil pan to a boil, turn to a low heat, and add the fish pieces (dip them in the batter several times before entering the oil pan to make it evenly filled with batter). Turn the fish pieces constantly in the middle to avoid burning the pot.
7. Fry on low heat for about 12- 15 minutes, and then serve.
