Ingredients: mutton, radish, star anise, cinnamon, red dates, coriander, shallots and ginger.
1. Slice mutton (my mutton is cut into large pieces in advance and put in the pot, which has been soaked).
If it is raw mutton, it needs to be sliced and put into cold water, and the floating foam will be removed after the water is boiled.
Second, put a proper amount of water in the soup pot, add mutton, boil over high fire, and add cinnamon and star anise.
Third, turn on a small fire, cover and stew 1 hour or so.
Four, an hour later, open the lid and add red dates (putting red dates will make the aftertaste of the soup slightly sweet), 2 shallots and ginger slices.
5. Bring the fire to a boil, turn it to low heat, and cover it with stew 15-20 minutes.
Six, 15 minutes later, put the radish slices into the pot, stew for 5 minutes, and finally sprinkle with coriander.
Mutton is warm. It can not only drive away the cold, but also nourish the body. It can be used for treating and nourishing various deficiency diseases such as cough due to wind-cold, chronic tracheitis, asthma due to deficiency of cold, impotence due to kidney deficiency, abdominal cold pain, weakness of waist and knees, sallow complexion and emaciation, deficiency of both qi and blood, and physical weakness after illness or postpartum. It is most suitable for eating in winter, so it is called winter tonic and very popular.
Because mutton has an unpleasant mutton smell, it is left out in the cold by some people. In fact, when making mutton, adding a little licorice, cooking wine and ginger together can remove its fishy smell and keep its mutton flavor. It's best not to put pepper or pepper in boiled mutton. Personal suggestions are for reference only.
Because mutton is warm, it is easy to get angry when eaten frequently. When you eat mutton, you can mix it with some cool vegetables, which can not only cool down, detoxify and remove fire, but also achieve the nourishing effect of mutton. So I choose white radish or green radish. Radish is sweet, pungent and cool, and enters the liver, stomach, lungs and intestines; Has the effects of clearing away heat, promoting fluid production, cooling blood, stopping bleeding, lowering qi, relieving exterior syndrome, promoting digestion, resolving stagnation, stimulating appetite, invigorating spleen, regulating qi and resolving phlegm.
