How to make square gourd pork dumplings ?
I used Wajiao Commune's Farmer's Noodle.
Take the right amount of flour into a large pot and add a pinch of salt (to prevent the dumplings from breaking the skin).
Add the right amount of water, and gently stir the flour with chopsticks to form small flakes.
Knead well to form a dough, cover and allow to rise for about twenty minutes.
Minute the pork, add chopped green onion, salt, soy sauce, cooked peanut oil, sesame oil, and black pepper, mix well in one direction, and let stand to taste.
Wash and dry young squash.
Peel the skin.
Shred it finely.
Add a spoonful of salt.
Scratch the salt with your hands and let it sit for about fifteen minutes.
Clutch the water dry.
Square squash shreds will pickle up a lot of water, pour it off.
Chop the shredded square squash.
Put into the pork filling.
Add only chopped green onion. Salt has already been added to the marinade before, so there is no need to add more salt.
Stir well to combine.
