2. Method/Steps
1. Prepare the ingredients: a lean duck, maltose, light soy sauce, white vinegar, sweet noodle sauce, and green onions.
2. Insert the tube of the pump deep into the duck’s neck.
3. Hold the neck with your left hand, hold the opening with your right hand, and inflate the air pump to separate the skin and meat of the duck.
4. Use a hook to hook the neck of the duck and put it into a pot of boiling water and blanch it for a few dozen seconds.
5. Heat 40 grams of maltose, 20 grams of white vinegar and 7 grams of light soy sauce in a small frying pan.
6. Brush the cooked crispy juice evenly all over the duck, and then hang it outdoors to dry overnight.

8. Chop off the duck head and duck leg bones before roasting.
9. Place the duck in the air fryer basket with the breast up.
