Shrimp uses a toothpick to remove the shrimp line and uses the kitchen to cut the back.
Add more oil to the pot. When the oil is slightly hot, add all seasonings, stir-fry over medium heat, add onion, ginger, garlic and pepper, and add bean paste to stir-fry until fragrant.
Stir-fry prawns, add yellow wine to remove fishy smell, add chicken essence, soy sauce, stir-fry a little sugar and taste. If it is salty enough, there is no need to add salt.
Cover and stew for a minute or two. If it feels too dry, add some water before stewing.
Take out the pan and decorate it with some coriander or shredded onion.
