Ingredients required: mutton, tofu, ginger, scallions, pepper, star anise, coriander, bay leaves, pepper, salt
Recipe Steps:
1. Soak the fresh mutton in warm water for an hour in advance to remove a lot of excess blood inside.
2. Put the cold water into the pressure cooker, do not cover it, bring it to a boil over high heat, and skim off the blood foam on it first.
3. After skimming off the blood foam, add scallions, ginger slices, star anise, peppercorns and bay leaves. Cover and bring to a boil. After the pressure cooker is steaming, reduce to low heat and simmer for 20 minutes.
4. Cut the tofu into small cubes and cook it in a pot for a while to remove the beany smell of the tofu.
5. After the mutton is cooked, take it out and cut it into small pieces.
6. Pour out the mutton soup used to cook the mutton in the pressure cooker, pour it into another pot, and then put the cut mutton and tofu in it.
7. Add an appropriate amount of pepper and bring to a boil over high heat. The pepper can remove part of the mutton smell. However, some people like the mutton smell, so don’t add it.
8. Turn off the heat and then add minced green onion and coriander. If you don’t like coriander, you don’t need to add it.
9. Finally add a little sesame oil and stir evenly.
