Use high fire first.
When simmering rice, first boil the water over high heat, add the rice, wait until the water boils again, then turn down the heat and simmer over low heat to prevent the rice from sticking to the pot or burning the bottom. Using low heat allows the rice to slowly absorb water and become soft and delicious. When steaming rice, first boil the water over high heat, then put the steamer over high heat and steam for 20 minutes before it is ready.
