Matcha Cookies (Jun's Recipe)

The ingredients of these cookies are very simple, only 5 ingredients including matcha powder. It does not contain eggs or any liquid ingredients such as milk or whipped cream, and has a very fluffy texture. Try it if you are looking for a fluffy texture with a sheer moistness!

Low gluten flour 70g

Corn starch 7g

Fine powdered sugar 25g

Butter 70g

Matcha tea powder 4g

After the butter is softened, add fine powdered sugar and beat with a whisk until fluffy in volume.

Whipped butter.

Mix the gluten flour, cornstarch and matcha powder and sift into the butter.

Toss with a spatula to form a moist batter.

Put the batter into a piping bag and squeeze out the cookie batter on a greased baking sheet. Place the baking sheet in a preheated oven at 180℃ and bake in the middle for about 12 minutes.
