How to fry duck leg meat?
I bought duck legs, washed them, boned them, cut them into pieces (I found it convenient to use scissors here), marinated them with a spoonful of starch and a spoonful of cooking wine for 30 minutes (I marinated them in the refrigerator all night because I came back from the gym too late).
Fry the salted duck leg until golden brown (you must be patient when frying the duck leg, and the duck skin faces down when the oil is hot)

Put oil in a hot pan, put down dried star anise, ginger, bean paste and garlic slices, and stir-fry until fragrant. Take out fennel, stir-fried onion, carrot and duck. In this step, you can put a tablespoon of soy sauce to color.
