According to legend, jiaozi was first invented by Zhang Zhongjing, a native of Nanyang in the Eastern Han Dynasty, on the winter solstice, and it was called "Quhan Jiaoer Decoction", which was used by Zhang Zhongjing to give up medicine to treat people in his hometown who suffered from typhoid fever and ear frostbite.

Giving up medicine lasts from the winter solstice to the New Year's Eve when people's frozen ears all recover. On the morning of New Year's Day, in order to celebrate the New Year and the recovery of frozen ears, and to thank Zhang Zhongjing for his kindness, people imitated the appearance of Jiaoer in "Quhan Jiaoer Decoction" to make food for breakfast, which was later called "dumpling bait".

Commemorating Zhang Zhongjing's kindness in applying medicine to help the people is the most popular explanation for the custom of eating jiaozi during the winter solstice and the Spring Festival in Henan. In the Song Dynasty, jiaozi was also called "Corner" in Henan, and in the Yuan Dynasty, it was also called "Flat Food", and it was not until the Ming and Qing Dynasties that it was called "jiaozi". In this way, honest Henan people accidentally caught up with the trend in the food industry and became the first group of people who "went to the sea" to eat jiaozi.
