②Condiments for the bottom of the clear soup noodle bowl: 90 grams of soy sauce, 30 grams of lard, 2 grams of pepper, 4 grams of MSG, chopped green onion 40 grams, 100 grams of fresh soup,
③Seasoning for the bowl of vegetarian pepper mixed sauce noodles: 60 grams of soy sauce, 30 grams of sweet red soy sauce, 4 grams of sesame oil, 70 grams of red oil chili, 4 grams of MSG, chopped green onion 40 grams, vinegar 10 grams.
Method:
① Chop the pig fat and lean meat into 0.3 cm large particles with a knife. Place the wok over medium heat, lower the mixed oil and heat until 50% to 60% hot, add the meat particles and stir-fry the loose seeds, add cooking wine, sweet sauce, refined salt and soy sauce and stir-fry until fragrant, add the fresh soup and bring to a boil, then remove from the pot and serve.
