Fried tofu
Preparation of ingredients:
1. Prepare 400 grams of old tofu, cut it into thick slices with a width of 0.5 cm, cut half of the green onion into chopped green onion, put it in a plate, cut the green onion into sections, cut half of the red pepper into small pieces, and put it in a pot to color.
2. Heat the wok, add cooking oil to the sliding wok, and then add half a spoonful of cold oil. The ingredients in a hot wok don't stick easily. Sprinkle a little salt in the wok and add tofu blocks, which will not only increase the bottom taste of tofu, but also prevent tofu from sticking to the wok.
3. Spread the tofu flat with a spoon first, then scoop out the excess cooking oil, turn on a small fire and shake the wok to make the tofu evenly heated.
4. fry until one side of tofu is golden, turn it over and fry the other side. When the tofu is golden on both sides, pour in the colander to control the oil.
5. Add a little base oil to another pot and pour in chopped green onion and stir fry.
6. After the onion is fried, add tofu, add 3 grams of oyster sauce and stir fry a few times.
7. Pour half a spoonful of water, add 1g chicken powder, 1g thirteen spices, 5g soy sauce, and pour in shallots and red pepper slices.
8. Hook in a little water starch, stir fry a few times, and then pour in a little sesame oil. Simply stir fry evenly, then turn off the heat and start the pot.
Tofu cooked in iron pot does not stick to the pot: when frying tofu, the oil in the hot pot is cold and it is not easy to stick to the pot. Sprinkle a little salt in the pot and add tofu blocks to make it more delicious, which not only increases the bottom taste of tofu, but also prevents tofu from sticking to the pot.
