In milkfish, Taiwan Province, it is generally sold to snack bars or restaurants, and these shops have professional handlers. Taiwan Province supermarkets also sell processed milkfish (pictured above), and basically no one is selling a whole one, because no one wants to buy it. Can do a lot of cooking:

Pan-fried milkfish, a famous "Dry Fried milkfish Belly" similar to Tainan snacks. But I personally think that dry frying is the least delicious, and dishes with some water are more delicious. If you want a light taste, steam and cook the soup, and if you want a heavy taste, marinate or bake it.
