Tools/Materials Fish Head, Tofu, Lean Meat, Onion, Ginger, Peanut Oil
Prepare all the ingredients: a complete fish head, two pieces of tofu, a proper amount of lean meat, two onions and a proper amount of ginger. Choose the head of bighead carp instead of grass carp. The head of bighead carp is more nutritious.
Cut the fish head into small pieces, wash and drain. Be sure to wash it twice more to clean the black and sticky things in the fish head.
Cut the lean meat into small pieces and marinate with salt and peanut oil for a while; Cut the tofu into small pieces and use tender tofu.
Slice onion and ginger. You can cut more ginger to remove the fishy smell.
Cool the oil in the hot pot until the oil is 80%. When it smokes, pour in the fish head and stir fry for a while.
Stir-fry the fish head for about two minutes, then pour in lean meat, add appropriate amount of salt, and continue to stir evenly.
Then add a proper amount of water, then add the chopped tofu, stir the tofu evenly, cover the pot, and cook over high fire.
When the fire boils, turn to medium heat. The fish head is well cooked. Turn it halfway to prevent it from sticking to the pot.
It takes about 10 minutes to cook, and then you can cook, sprinkle with onions and enjoy the delicious fish head tofu soup.
