The first step is to make the dough for the water-oil crust. In a large bowl, prepare 150 grams of plain flour, add 55 grams of corn oil, 40 grams of water and 20 grams of maltose, mix well and knead underhand to form a ball; then knead the dough well, kneaded and wrapped in plastic wrap for one hour of relaxation.
Step 2: Make the shortening dough. Add 100 grams of all-purpose flour to the bowl and 46 grams of corn oil, then form a ball and wrap it in plastic wrap for one hour.
Step 3: Add a tablespoon of white sesame seeds to a wok and sauté over low heat to toast the sesame seeds; stir-fry until lightly browned, then remove from the wok and set aside to cool.
Step 4: Pour the cooled sesame seeds onto a board and roll them out with a rolling pin, then put them into a large bowl; then add the fried glutinous rice flour to the bowl, and add a little winter melon sugar and kumquat crumbs.
Step 5: Add a little peanut oil to the sesame filling in small amounts, mix well, and then add two tablespoons of sugar, mixing until it can be scrunched into a ball (if it's too dry, you can add a little more oil or cold water); finally, divide the filling into 10 dosages, and shape into a circle and set aside.
Step 6: Take out the dough and shortening, roll them into strips, and cut them into 10 portions; then flatten the shortening portions in the palm of your hand, wrap the shortening around them, and close the mouths.
Step 7: Take the first wrapped dosage and use a rolling pin to roll it into a duck's tongue shape, then roll it up again and roll it out; then press it with a rolling pin in the middle and wrap it in the center; then roll it out again, wrap it with the filling, and close it with a tiger's mouth to wrap it up.
Step 8: Round up the stuffing and flatten it; then brush the top of the cake with water, sprinkle with sesame seeds and press it firmly, and put the cake on a baking sheet.
Step 9: preheat the oven at 180 degrees for 5 minutes, then put the baking tray into the middle of the oven, 180 degrees baking half an hour or so, baked to the top of the color can be removed from the oven.
