Ingredients preparation: half a chicken, 200g of dried shiitake mushrooms, 2 green onions, 4 slices of ginger, 5 heads of garlic, appropriate amount of salt, appropriate amount of cooking wine, appropriate amount of dark soy sauce, appropriate amount of chicken essence, and appropriate amount of cornstarch.
Note:
1. Before cooking, cut the chicken into pieces in advance and soak the mushrooms 2 hours in advance.
2. Salt can be added at the beginning or before cooking. I like a slightly stronger taste for this dish, so if I add salt at the beginning, the ingredients will be more flavorful.
Steps——
1. Heat the pot and add appropriate amount of oil, add onion, ginger and garlic and stir-fry until the aroma comes out (leave an appropriate amount of green onion in the front part for final decoration) chopped green onion).
2. Add the washed and drained chicken pieces and add appropriate amount of salt.
3. Pour in cooking wine to remove the fishy smell.
4. Pour in dark soy sauce and mix color.
5. After all the chicken pieces change color, pour in boiling water to cover about two-thirds of the chicken pieces.
6. Add soaked and drained mushrooms.
7. Bring to a boil over high heat, then turn to low heat and simmer, cover and simmer for 10 minutes, then turn to high heat to reduce the juice. Finally add a little MSG or chicken essence.
8. Take it out of the pot and sprinkle with chopped green onion.
