Ingredients: medium gluten flour and low gluten flour.
Accessories: salt, edible oil, 70-degree hot water, edible oil.
1. Put the medium gluten flour and salt into a basin, stir them evenly with chopsticks, then slowly pour in hot water, stir while pouring, stir and mix the dry flour and water evenly, and add edible oil to knead them into balls.
This dough is so soft that it doesn't smooth when rubbed. Relax for 5- 10 minutes. Knead into smooth dough, cover with plastic wrap and relax for 20 minutes.
3. In a small clean bowl, add low-gluten flour and salt and mix well. Then put the cooking oil into the pot, heat it to 70%, and pour it into the flour. Stir well with chopsticks and the cake will be ready.
4. Sprinkle a proper amount of flour on the chopping board, move the awakened dough to the chopping board, and divide it into 6 pieces of equal size, which can be slightly rounded. Remember not to knead pancakes after waking up, because pancakes taste hard after gluten rearrangement.
5. Take a dough and roll it into a round dough with a rolling pin. Don't roll it too thin Brush a layer of cake evenly on it and sprinkle a layer of dry flour to prevent oil leakage.
6. Cut from the center of the dough with a knife, roll up from the cut to the head, then pinch the edge of the mouth, seal the mouth with a big mouth at the top, press down from the tip and relax for 5 minutes.
7. Take a loose embryo and roll it round with a rolling pin, which is thinner and not too thick, so that it is easy to mature when baking. Remember that the embryo just made is not easy to roll, let the gluten relax for 5 minutes so that the cake can roll open and round.
8. Heat the pan, brush the cooking oil, put the rolled cake embryo, brush the cooking oil on the surface, cover the lid and cook for about 2 minutes.
9. Wait for the bottom of the cake to bake for a long time, then open the lid, turn it over, continue to bake with the lid for 2 minutes, and then open the lid, you will find that the cake has expanded and turned over. After the cake is browned on both sides, it can be cooked.
