1. Wash the ribs and chop them into sections about 3 cm long; peel, wash and cut the lotus root into slices; peel and wash the ginger and garlic, then smash them into pieces and set aside. Remove the skin from the green onions, wash and set aside.
2. Prepare a pot of boiling water, boil the ribs in the boiling water to remove the blood, take them out and wash them with clean water.
3. After cleaning the pressure cooker, add cooked ribs, lotus root slices, crushed ginger and garlic, green onion strips and seasonings such as salt, soy sauce, MSG, Sichuan peppercorns, etc., and cook over high heat until the pressure cooker starts to sizzle. If there is a hissing sound, you can change the heat to medium, simmer for 15 minutes and then turn off the heat.
4. After waiting for the temperature in the pressure cooker to cool down, you can open the lid and prepare to load the bowl. If you are in a hurry, you can also use a basin with water in it. Carefully put the pot into the cold water in the basin to cool it down. You can also pour a small amount of water on the lid of the pot to cool it down, and wait until the pressure cooker is watered. When you hear the sound of air being sucked into the pot, you can stop watering, remove the valve cap of the pressure limiting valve, and open the pot lid.
