The steps are as follows:

Kidney Bean, Lotus Root and Pig Trotter Soup
Ingredients: three pig trotters, one lotus root, and one small kidney bean Bowl
Ingredients: 3~5 slices of ginger, one star anise, a section of green onion, appropriate amount of salt
Method:
1. Soak kidney beans in warm water for more than 12 hours in advance , clean the pig's trotters, peel and wash the lotus roots.
2. Boil water in a pot, add 2 pieces of ginger, and after boiling, put the pig's trotters in and blanch the blood.
3. Transfer the pig's trotters into the pot, add ginger slices, green onion segments and star anise.
4. Add enough water and bring to a boil over high heat.
5. Add kidney beans and continue to boil over medium heat for about 30 minutes.
6. Transfer to an electric stew pot and simmer for 4 hours. Add the lotus root at the 3rd hour.
7. Add salt to taste.
