Step 1: Ten Ingredients for a Hot Sauce
There are quite a lot of ingredients needed for a delicious hot sauce. You'll need to prepare the usual ingredients such as sugar, salt, chili powder, green onions, shrimp paste, ginger, garlic, pears and fish sauce. To suit your personal taste, put these ingredients in proportion in a blender and you'll be able to whip up a delicious hot sauce. Of course, Chef Kim Sung-chul also has a tip for making a thicker sauce by putting a little Sprite in the blender.
Step 2: Cut radish into 9 pieces and marinate for 6 hours
After making the hot sauce, it's time to prepare the radish. First, you need to peel the white radish and choose the middle part of the radish. You can cut the radish slightly smaller when making it at home, about 9 pieces. Add sugar and salt to the prepared radishes and marinate for 6 hours.
Step 3: Remove Water and Canning
After the daikon cubes have been marinated with sugar and salt, they can be placed in bamboo baskets to automatically remove the water. Once the water is removed from the radishes, they can be canned.
Step 4: Add Ingredients, Taste Test, and Stir
With everything ready, it's now time to blend the radishes with the hot sauce. Since everyone's taste is different, you can start by adding the hot sauce and mixing it up and down with disposable gloves. Mix well and test the flavor. If it's a little bland, add more hot sauce and mix.
Step 5: Seal and ferment for a day or two
At step 4, the radish kimchi has been successfully made. But if you want the kimchi to be more flavorful, you'll have to wait a little longer. The finished kimchi will be sealed and fermented for a day or two, when the flavor will be more intense.
