1. Type 1
(1) Boil water in a large pot, sprinkle some salt, bring the water to a boil, put in the noodles, and let it boil for a while. The core of the noodles should be mostly white. , because it needs to be fried to heat.
(2) Immediately pour cold water into it and loosen it.
(3) Filter and remove the cold water.
(4) Heat the oil in the pan until your hand is ten centimeters away from the top of the pan.
(5) Crack the eggs, add the sausage and stir-fry until the sausage turns white.
(6) Add the washed and drained green vegetable seedlings and stir-fry.
(7) Before the vegetables come out of the water, add noodles, a spoonful of salt, stir-fry, and pour in soy sauce.
(8) Flip carefully and keep heating until all noodles are evenly coated in color.
2. The second type
(1) Place the raw noodles on the steamer, turn on the steamer and steam over medium heat for 15 minutes to steam the noodles thoroughly.
(2) Shake the steamed noodles and set aside.
(3) Prepare the side dishes: shred the cabbage, carrots, and onions respectively, cut the pork belly into thin slices, and mince the chives.
(4) Heat the pan with cold oil, add pork belly and stir-fry. Fry until the pork belly changes color and spits out oil, add a teaspoon of cooking wine and an appropriate amount of soy sauce.
(5) After the pork belly is browned, add onions and shredded carrots and stir-fry.
(6) Add cabbage and continue stir-frying.
(7) Stir-fry evenly, add salt, add oyster sauce and stir-fry evenly.
(8) Finally add the steamed noodles, stir-fry for a minute or two, stir-fry evenly and turn off the heat.
3. The third type
(1) Chop onions, ginger and garlic, and slice tomatoes and onions.
(2) Boil the water and cook the noodles. The noodles will be harder than usual and will be fried after a while.
(3) Heat the oil in the pot, add the garlic and sauté until fragrant.
(4) Then add bacon and green onions and stir-fry, then add tomatoes and onions and continue stir-frying.
(5) Add seafood sauce, oyster sauce, light soy sauce, thirteen spices, rapeseed, and a little water.
(6) Add the cooked noodles, add salt and simmer for a while, remove from the pot and add chicken essence.
