Second, brewing materials and proportion:
1, mature, dark-colored and good-quality mulberries, 1 serving.
2. Fresh and good water (note: raw water), 1.5 copies.
3. 0.4-0.5 portion of white sugar. If the taste of mulberry is weak, or the mulberry bought after rain, the white sugar can be increased appropriately.
4, the right amount of wine cakes (2 grams a teaspoon per catty of mulberry).
Third, the process, fermentation and matters needing attention:
1, wash the mulberry with clear water.
2. Crush the mulberry with a juicer, add water and white sugar in proportion, and put it into a vessel.
3. After the raw materials are put into the vessel, stir them evenly with wooden sticks or long chopsticks, control the temperature at 22-28℃, and start fermentation after about 24 hours, stirring them twice a day. Release gas at least twice a day!
4. The fermentation time is 3 days. After 3 days, the skin residue is separated immediately and filtered with clean thick stockings or fine gauze.
5. After the peel and residue are separated, it enters the post-fermentation period, and the post-fermentation time is about 1 week. The fermentation stamina of mulberry is great, so pay attention to releasing gas regularly.
6. Clarify. Filter the "wine mud", re-bottle, seal and isolate oxygen. Be careful not to fill it too full. If you use a large glass container, you should release the gas every three to five days, depending on the situation.
At this point, you're done. After 50 days (counting from the date of brewing), you can taste the fruits of your labor.
When you fill the mulberry wine, your intuition tells you: this is made from mulberry juice, which is hygienic and contains no additives! Can you stop moving your index finger?
