Delicious eggplant braised rice
Rice and glutinous rice are mixed in a ratio of 1:1, washed and soaked for one hour
Eggplant is washed and shredded
Meat is shredded, chopped green onion is cut
Hot pan is cooled with oil, chopped green onion is added, and minced pork is stir-fried
. Add water just below the rice, and never add too much, because the rice is soaked, and there is water in the eggplant.
Simmer with low fire for about 2 minutes, dry the water, mix the rice and vegetables evenly with a spatula, simmer with low fire for another 5 minutes, and turn off the fire.
Make a sauce: seafood soy sauce, minced garlic, coriander, chives, sesame seeds and Chili oil.
It can also be paired with green lettuce, which is delicious and beautiful.
